It is also used as a food additive for specific nutritional purposes. 5′-AMP is an activator of a class of protein kinases known as AMP-activated protein kinase (AMPK). Along with inosine monophosphate (IMP), AMP mediates the dissociation of skeletal muscle actomyosin to actin and myosin. Therefore, these two factors may be involved in causing the resolution of rigor mortis in muscles. |
